Pieces of pineapple are wrapped in bacon and roasted in a sweet sauce. I started making these for family get-togethers and everyone LOVED them. No one could eat enough of them. I am also using them when I cater my daughter's wedding.

Green Eyes: My Fave Cocktail Made With Midori Melon Liquer. Midori (1oz), Malibu Rum (1oz), Cream Of Coconut (1/2oz), Fresh Lime Juice (1/2oz) And Pineapple Juice (1 1/2oz). Pour Ingredients Over Ice Into A Glass, And Stir Gently. Garnish With A Pineapple Wedge.
